The D&D Dungeon Master's Guide has an optional rule for rolling Armor Class [Defense in True20], with a brief discussion about the pros and cons.
Both The Noble's Handbook and Skull & Bones (both by Green Ronin, for D&D 3.5) have some rules for adding more details and options to duels. They would, of course, require some adaptation to the new system. And, of course, the real question is: What do you want to be able to do with duels?
