Dodge Rolls in True20

Do you mean making dodge rolls instead of having a set defence value? Dodge rolls would just add one more die roll and another random element to combat. If the die roll and added randomness add to the excitement for you, then go for it. Personally I prefer to keep things as simple as possible to keep combat going as quickly as possible.

The D&D Dungeon Master's Guide has an optional rule for rolling Armor Class [Defense in True20], with a brief discussion about the pros and cons.

Both The Noble's Handbook and Skull & Bones (both by Green Ronin, for D&D 3.5) have some rules for adding more details and options to duels. They would, of course, require some adaptation to the new system. And, of course, the real question is: What do you want to be able to do with duels?
